5 Recipes for Cinco De Mayo! (Kiwi-Passion Margaritas!)

While many Cinco de Mayo forecasts in California include clouds and possible showers, the Friday and Saturday before are projected to have fantastic weather.

80 degree temperatures, clear skies...(Sound familiar?)

If you're having a get-together this weekend to celebrate Cinco de Mayo, here are a few M&PT original recipes! They're all quick and easy to make (because who wants to slave away in the kitchen on a beautiful day??), but more importantly, they all have enough Mexican flare to go with the holiday. This includes a new recipe for Kiwi-Passion Margaritas!







"Four Seasons" Margaritas - To get the celebration started off right, have these fruity margaritas ready for your guests as soon as they walk in the door! "Four Seasons" juice is a blend of pineapple, guava, orange, and mango. So refreshing!


Grilled Pineapple, Jalapeno, & Shrimp Ceviche with Fried Plantains - This is a perfect party dish! It's bright, fresh flavors are exactly what you want on a warm, sunny day...whether you're by the pool or a beach. (Or tailgating at the Giants game?!) Ceviche is easy to make in large batches, and you can serve it all on one big platter. Arrange fried plantains or tortilla chips around the edges to make it easy and inviting for your guests to dive right in.



Coconut Shrimp Tacos with Roasted Salsa - Tacos and salsa are classic Mexican dishes, but these tacos have an M&PT twist! Sweet shrimp is coated in coconut, then fried to a golden-brown crisp. Wrapped in a handmade corn tortilla and topped with a sweet & spicy salsa, the crunchy coconut shrimp will make your guests long for a tropical getaway.


Leche Flan - For a sweet end to your Cinco de Mayo festivities, serve up mini Leche Flans! This super simple dessert can be made ahead of time, and you can garnish or serve with slices of fresh fruit. Sweet, ripe pineapple or mango pair well with the rich custard and caramel sauce.


Kiwi-Passion Margaritas - At the end of the weekend, after friends and family have finally left and your house is now strangely quiet, fix yourself one of these sweet & sour margaritas and put your feet up. Toast to your successful party and, of course, your awesome hosting skills. ;)



These margaritas are made with tequila, St. Germain, Cointreau, passion fruit juice, lime juice, and fresh kiwis.

Kiwis are a beautiful, vibrant green, and their flavor actually pairs really well with the lime and salt in a margarita.

Puree the fruit with a little bit of sugar, until the mixture is completely smooth.

Next, prepare your salt/sugar-rimmed glasses, then fill each glass and a cocktail shaker with ice. Pour the kiwi puree, lime juice, passion fruit juice, tequila, St. Germain, and Cointreau into the shaker, and shake to mix well.

Finally, pour the margaritas into the prepared glasses, and garnish with fresh slices of kiwi or lime. These Kiwi-Passion Margaritas are tart, with a hint of tropical sweetness, and absolutely refreshing! They would make a perfect finale to the Cinco de Mayo weekend, or would be great as an addition to your party-cocktail-rotation!

Kiwi-Passion Margaritas (serves 2)

Ingredients:
3 parts Kiwi Puree (*Kiwi Puree: 1 cup Chopped Kiwi + 2-3 tbsp Sugar)
1 part Freshly Squeezed Lime Juice
1 part Passion Fruit Juice, Juice Blend, or Puree
3 parts Tequila
1 part Cointreau
1 part St. Germain
Ice
Sugar & Salt, for rimming
Kiwi and/or Lime Slices, for garnish
  1. Prepare two glasses by rimming with sugar/salt and filling each with ice.
  2. Pour the kiwi puree, lime juice, passion fruit juice, tequila, Cointreau, and St. Germain into a cocktail shaker filled with ice. Shake to mix well.
  3. Pour the margaritas into the prepared glasses, and garnish with slices of fresh kiwi or lime.
  4. Serve immediately! Enjoy!
